Very interesting. It was fascinating to learn that bourbon "breathes" while in the charred oak barrels.
ReplyDeleteYes, the flow of bourbon both into and out of the oak imparts the flavor and color in very significant measure. And, I agree - the science of it all is fascinating. Thanks!
